This is a recipe we oftenly prepare when foreign guests ask for something „typical German“. The main ingredients are sauerkraut, potatoes, pork fillet, cream and sour cream. It´s easy to prepare and delicious.

We call it „The Sauerkraut Thing“, and of course there is a story behind it:

Some years ago we spent our holidays in a nice cottage in Antigua. The owners asked us, if we could prepare something „typical German“ and we knew what to do. The young daughter was quite suspicious, but finally liked the German food.

When we came back  one year later her first question was: „Can you prepare „The Sauerkraut Thing“ again?“

The recipe:

  • 550 gr  pork
  • Salt, Pepper
  • 100 gr. bacon
  • 2 onions
  • 3 spoons oil
  • 6 juniper berries2 laurel leafs
  • 800 gr Sauerkraut
  • 800 gr potatoes
  • 300 ml cream
  • 200 gr Crème fraiche or sour cream
  • 1-2 spoons dried Majoran
  • butter


  • Cut pork in slices – 3 cm thick. Spice with salt and pepper.
  • Cut bacon in little cubes. Cut onions.
  • Heat oil in pan. Add juniper berries and laurel. Fry pork shortly, take out of the pan and put aside.
  • Fry bacon in the pan, add onions. Add Sauerkraut and mix it with the bacon and the onions.
  • Heat oven to 180 degree C.
  • Peel potatoes and cut them to thin slices.Prepare a casserole with butter.
  • Put Sauerkraut, pork and potatoe slices in the casserole. It should look nice.
  • Mix cream, crème fraiche and majoram, spice with salt and pepper. Pour the cream mix over the sauerkraut in the casserole.
  • Bake everything in the oven (180 degrees C)  for 45 to 50 minutes.
